SubEthaEdit Archiver will allow you to track one SubEthaEdit document. Timed snapshots of the document are saved into a folder where you can retrieve previous saves.

So when a student decides to wipe-out your document, you can coolly close the document, find a version just before it was wiped, and re-announce it again.
